TURKEY AND STUFFED CUPCAKE

Turkey and cupcakes are better served together but most people don’t make theirs in this unique way. You can save your oven space with this delicious and rare technique finishing Cranberry cupcakes in the cavity of your turkey instead of using usual white bread, corn bread and croutons.

Preparation step by step

  1. Get a turkey and defrost it. After that bake the cupcakes that will be stuffed in the turkey (with the instruction and direction provided below).
  2. A 13-pound turkey will only accommodate 12 cupcakes. You have to bake the cupcake first and finish inside the turkey. You must prepare the cupcakes using mini silicone liners not papers for better steaming result inside the bird with its flavor.
  3. Some minutes after placing the cupcakes in the oven, then start prepping the turkey, you can choose any prepping method because the turkey is not our focus. Remove its inwards and coat it on all sides with vegetable oil, salt, and pepper, then place the turkey on a roasting pan.
  4. When the cupcakes are out of the oven, stuffed them inside the turkey and increase the oven temperature to 400 F. Close up the turkey using cooking twine or anything similar to hold them together and prevent them from falling out of the cavity.
  5. After baking the turkey for 45 minutes, lower the heat of the oven to 350 F. But if it is a 13-pound turkey, then you need to bake for about 75 minutes again. It all depends on the size of your turkey.

Cupcake ingredients

  • 1 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 1 cup whole-berry cranberry sauce
  • 1/4 cup canola oil or vegetable oil
  • 1/4 cup orange juice

 

Cupcakes preparation step by step

  1. Preheat oven to 350 F.
  2. In a medium-sized mixing bowl or bowl of a stand mixer, mix together sugar, flour, baking powder, baking soda, and salt.
  3. Add butter and mix on medium-low for two minutes.
  4. Mix in eggs one at a time.
  5. Mix in cranberry sauce and oil.
  6. Mix in orange juice.
  7. Fill cupcake liners just over half full.
  8. Bake for 20 minutes or until a toothpick comes out without wet batter stuck to it.

PUMPKIN PIE POPSICLES

This is for lovers of pumpkin for Thanksgiving. It is prepared with GLORIOUS spices for great treat on thanksgiving. Although you can use little sugar but vanilla stevia drops is the major source of the sweetness is recommended for a creamy, chocolate and fruity pie.

Ingredients

  • 8 ounces of Goats Milk, fat free Greek Yogurt, unsweetened Coconut Milk or any Vegan milk you desire
  • 3 ounces unsweetened Pumpkin Purée
  • 1/2 dropper full of Vanilla Stevia Drops, Honey or Maple Syrup to taste
  • 1/4 teaspoon Pumpkin Pie Spice
  • Pinch of fine Sea Salt

Preparation step by step

We are making four popsicles. You’ll have to mix all the ingredients in a bowl, and add the recommended sweetener.

  1. After that put the mixture in about 1/4 inch Popsicle molds or dixie cups. Lay a sheet of foil to cover the mixture and put sticks through it.
  2. Freeze until it is solid for about 2 hours approxima5tely and remove the popsicles from their molds.

RED WINE LACQUERED TURKEY WITH SPICED BUTTER

This is a turkey recipe but not in the traditional way. This requires you to use a full wine bottle to flavor or dress your turkey before cooking along with a cinnamon, ginger and orange. This is a stop search for a special side dish on a thanksgiving day.

Ingredients

  • 1 bottle red wine (I used a zinfandel for its fruity flavors)
  • Small Turkey 7-8 pounds
  • Kosher salt
  • 8 ounces soft butter
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • Zest of one large orange
  • One large orange, cut into quarters
  • 2 cups chicken broth

Preparation step by step

This recipe is used for a 7-8 pound turkey, you will have to double or triple it for 14-16 pound turkey, it all depends on your turkey size, but put in mind that it all have to be adequate.

  1. Start by pouring the bottle of wine in a small pot and heat until you have 1/2 – 1/3 cup of wine remaining.
  2. After that prepare the turkey 30 minutes before you roast it. You will have to heat it first at 450 degrees, and then use a fork to mix the butter, ginger, cinnamon and orange until it becomes smooth.
  3. Apply the butter to the muscle of the bird. Use salt on it and stuff the cavity of your turkey with orange wedges.
  4. Apply the remaining wine thoroughly on the turkey body; pour two cups of chicken stock in the bottom of the pan before putting the chicken into the oven. The duration that the turkey will be in the oven all depends on the pound of the chicken, but 13 minutes is okay per pound.
  5. Remove when done and leave for 15 – 30 minutes foiled to keep it spicy.

RED WINE CRANBERRY SAUCE

All Cranberry lovers would not resist this, especially if prepared on Thanksgiving.

Ingredients

  • Yield = 1 3/4 cups
  • 2/3 cup sugar
  • 3/4 cup dry red wine
  • 1/2 cinnamon stick (1 1/2 inches)
  • 1 package fresh or frozen cranberries (about 12 oz.)
  • 1 tablespoon slivered tangerine, Clementine or orange zest, or more to taste

Preparation step by step

  1. Put the saucepan on an average heat and mix and oil the sugar, red wine and cinnamon stick.
  2. Reduce the heat a little bit and simmer for few minutes, stir it occasionally until you see that the sugar is dissolved and the wine is reduced a little bit.
  3. After that add the cranberry and zest, and then simmer again for about 10 minutes. You can serve in a moderate temperature.

CHIPOTLE SHELLS AND CHEESE POTATO SKINS

You don’t have to make mac, cheese and potatoes separately. You can actually save space and time by making them together and you can serve them before dinner while the thanksgiving turkey is still in the oven.

Ingredients

  • 1 box VELVEETA Shells and Cheese, Bold Chipotle flavor
  • 7 medium potatoes
  • 1 cup finely diced cooked chicken
  • ½ cup cooked, crumbled bacon
  • green onions

Preparation in steps

  1. You will have to cook the potatoes in the oven the potatoes for an hour at 425 degrees, until it becomes soft.
  2. Cut them into two and scoop out the middle of the potato.
  3. After that prepare the Velveeta shells alongside with Cheese according to the package directions you have.
  4. Stir the chicken and bacon and Spoon until the mixture becomes even with the potato skins.
  5. Broil for about 2 minutes and cap with green onions and remember to serve warm. This recipe is meant for 14 potato skins.
